Hoppy Easter! Healthy, kid-friendly treats!

Spring is HERE and that means Easter is near! Did you like that rhyme? Tee hee hee. Who likes to make sweet Easter treats with their kids for fun? To create memories? Or maybe to pass the time? Any way you slice it, it’s great to engage your littles in baking for many reasons! I have a few recipes I’d like to share for the holiday and hope many of you can carve out time to make them! My daughter had a blast and it was so special to see her excitement while doing a little “math” on the side 🙂

*Reese’s Eggs- Who loves reese’s pieces or reese’s cups? Umm…ME! Here’s a simple recipe to follow that cuts down on sugar but you still get the sweet craving you want! Ingredients include:

1 1/2 cups almond or peanut butter

3 Tbsp maple syrup or raw honey

2 Tbsp coconut flour

1 tsp vanilla

1 cup dark chocolate chips

Mix nut butter, maple syrup or butter, coconut flour, and vanilla together until well blended/smooth. Shape into egg or balls and refrigerate for 10-15 minutes. Meanwhile, heat chocolate chips in a pan on the stove on low until melted. Once your eggs are chilled, use a fork to dip them into the chocolate. Place back in fridge for chocolate to harden for another 10-15 minutes. Such a healthier dessert for sure!

*Bunny Pancakes- Everyone loves pancakes, right?! What about ones that are healthier and are packed with protein?! Win, win! Ingredients include:

1 cup 1egg whites

1 cup cottage cheese

1 cup uncooked oatmeal

2 bananas (keep one aside for decoration)

cinnamon to taste

3 Tbsp vanilla

blueberries, raspberries, and apples

Using a blender mix all ingredients except 1 banana and the other fruits. Once mixed well, cook on stove top on low as you would with regular pancakes. Cook each side 2-3 minutes until a little browning shows. Break banana in half to create bunny ears and place berries and apple slices for eyes, nose, and a mouth! So cute!

*No Bake Fruit Tarts- This gem of a recipe is similar to decorating cookies and kids’ creativity really shines! Ingredients include:

1 cup almond butter or peanut butter

2 cups uncooked oats

1/4 cup raw honey

3/4 cup greek yogurt

fruit of choice: blueberries, strawberries, grapes, cutie oranges, etc.

Mix nut butter of choice, uncooked oats, and raw honey together. Press and shape into circles; refrigerate for 10-15 minutes. Then spread greek yogurt on top and decorate with fruit of choice! Enjoy!

Hope you enjoy these little Easter treats and even more so the time with your kids! After all, they won’t always want to do these kinds of activities with you, so soak it up now!
