5 Easy Summer Recipes
Summer is here and in full swing! Life is busy this time of year so I am here to make your life a bit easier with a handful of quick, easy summer recipes that are certain to satisfy your family! I have also added all my favorite kitchen tools and trinkets here, so you can see exactly what I use in my home!
This first one is a favorite of ours! It’s light and fresh, but hearty enough to fill you up as well!
Avocado Chicken Salad
- -2 large chicken breasts, cooked & shredded or chopped
- -3 medium (or 2 large) avocados
- -1 cup of corn (I use corn but you could use fresh cooked also)
- -6 oz bacon, cooked & chopped
- -1/4 cup green onion, chopped
- -2 tbsp dill, chopped
- -2 hard boiled eggs, chopped
- Lemon Dressing
- -3 tbsp fresh lemon juice
- -3 tbsp EVOO
- -1 tsp sea salt, to taste
- -1/8 tsp black pepper, to taste
-Toss all ingredients together and add the dressing on top! Pro tip for cooking the chicken: cook it in the instant pot and shred it for the week! If you don’t have an instant pot, a crockpot works just as good! If you make ahead just leave the avocado off until you’re ready to eat!
Second go-to is a delicious tortellini pasta salad. I Normally will make this on a Saturday morning and we will eat on it all weekend!
Tortellini Pasta Salad
- -1 large bag of frozen cheese tortellini
- -1 can of calmative olives
- -1/2 red onion, chopped
- -1 cucumber, chopped
- -1/2 cup feta cheese
- -Italian dressing
-Cook the pasta and let it cool completely. Add all ingredients. And mix together. For the dressing I normally just use whatever Italian dressing I have in my fridge. Don’t OVER do it on the dressing if you want the salad to last a couple of days, the acid in the dressing will make the pasta get soggy! I love serving this with garlic bread!
Third we have CRESCENT ROLLS for the win! So basically you can wrap anything in a crescent roll and it’s delicious! Here are my go-to’s.
Crescent Roll Meals
- Ham & Swiss, roll these two items up and bake for 10 minutes at 375!
- Pizza rolls, mozzarella cheese sticks (quartered), pizza sauce & pepperoni! Roll them up together and bake for 10 minutes at 375!
- Shredded chicken and goat cheese, I use the HEB rosemary flavored goat cheese. Roll up and bake for 10 minutes at 375!
**BONUS: put chocolate chips and marshmallows in the rolls for a delicious mores dessert!
Now we can step up taco Tuesday with some delicious chicken tacos, that are so easy all you have to so is turn on the crockpot!
Chicken Tacos
- -4 boneless skinless chicken breast, thawed
- -1/2 cup water
- -1 packet of ranch seasoning
Add all these to a crockpot and let them simmer for about 6 hours on low. If you’re in a bit of a rush you can make the process faster by using your instant pot! Here is the one I use! For the tortillas I use the HEB mixlata or the fresh flour tortillas out of the bakery. But you pick your preference!
Topping ideas:
- -Lettuce
- -Avocado
- -Chopped tomatoes
- -Chopped olives
- -Black beans
- -Corn
- -Sour cream
- -Shredded Cheese
Literally can never go wrong with taco Tuesday, plus you can use all your left over chicken for a taco salad on Wednesday! Or even better, my last recipe for y’all!
Chicken Enchiladas
*same as above*
- -4 boneless skinless chicken breast, thawed
- -1/2 cup water
- -1 packet of ranch seasoning
Add all these to a crockpot and let them simmer for about 6 hours on low. For the tortillas I use the HEB mixlata or the fresh flour out of the bakery. But you pick your preference!
- -1 16oz container of sour cream
- -1 can of green enchilada sauce
- -1 small can of green chilis
- -1 package of shredded cheese, I use the Mexican blend
Whisk the sour cream, green sauce and green chilis. Mix in 1/2 bag of the cheese and the chicken into the 1/2 of the sauce mixture (save remaining sauce). Roll the mixture into the tortillas and lay out the enchiladas flat in a pan. Pour remaining sauce over the entire pan and top of the rest of the cheese. Bake on 350 for 15 minutes covered with foil, uncover and broil until cheese is bubbly!
